Carrot Cake Recipe

My grandmother’s recipe for a classic cake, made with freshly grated carrots.


I always look forward to eating a piece of this delicious cake.  My grandmother was always in the kitchen whipping something up. Mom, tells me grandma would try different combinations to get all the ingredients to fit. Until she developed the perfect carrot cake.

I would say this cake is peeerfection!



Eva’s Carrot Cake



2 cups of flour

2 teaspoon baking powder

1 1/2 teaspoon baking soda

1 teaspoon salt

2 teaspoon cinnamon        

1 1/2 cup oil

2 cups sugar                            

4 eggs

2 cups grated carrots

1 can crushed pineapple

1/2 cup chopped pecans


1 stick butter

1 package cream cheese

1 teaspoon vanilla

4 cups of powder sugar







1. Heat the oven to 350°F.

2. In a large bowl sift flour, baking powder, baking soda, cinnamon, and salt together. 

3. Mix oil, sugar, and add eggs one at a time beating after each addition. Add dry ingredients and mix well.

4. Fold the grated carrots, crushed pineapples, and pecans (set aside some leftover pecans for decorating) into the mixture. 

5. Bake for 45 min.  

6. For the cream cheese frosting using an electric mixer at medium speed, beat cream cheese, butter and vanilla until very smooth. Turn the mixer on low speed and add in the powdered sugar in batches.

*Let the cake completely cool before frosting.
